I've been vegetarian for the most part of 4 decades and two things have been revoluntionary for me. There were times I too was not getting enough nutrients, until I discovered green smoothies full of dark leafy greens. They take less than 5 minutes to make and are delicious and we drink them daily. Victoria Boutenko's "Greens for Life" is a quick read with great information about this. Secondly, it used to take a long time to find inspiring recipes and now so many big name chefs like Matthew Kenney and Charlie Trotter, have vegan cookbooks inspired by the raw food movement, which is amazingly creative. The most interesting restaurant experience we've had as a family was while visiting our son in NYC, at Pure Food and Wine. It's a raw vegan restaurant and we took family members who are big time meat and sauce eaters. They loved it! After almost 4 decades of vegetarian cooking I am ecstatic about the creativity and support now available. Thank you for a great program1
