We belong to a Community Supported Agriculture (CSA) and often get too many strawberries, plumbs, peaches, and oranges than we can eat before they get over-ripe. I've used Ina Garten's recipes for making easy jam and marmalade. I make small quantities that don't need to be canned, just a jar-full at a time. These can last several weeks in the fridge and are low in sugar because you control the sweetness. My family really enjoys these and they are not hard to make. You just have to be vigilant so that the jam doesn't burn as it thickens.
