Culinary Historians Of San Diego Present: A Convergence Of Art & Chocolate

Culinary Historians of San Diego will present "A Convergence of Art & Chocolate," featuring Eclipse Chocolate's Will Gustwiller at 10:30 a.m. on May 17th in the 9th floor Event Suite at the Central Library.

With a Masters degree in sculpture under his belt, Gustwiller transferred his artist's perspective and intuition to a new medium, and in 2004, founded the company he first named "Eclipse Chocolate," where he began handcrafting exotic chocolate and confections.

He opened his first dessert cafe on El Cajon Boulevard three years later. By 2013 the one-man operation had grown to include 40 employees when it relocated to its present South Park location.

Today, Eclipse Chocolate Bar & Bistro presents 100 different confections, dozens of pastries and a full-menu restaurant.

Chef Will describes his company's mission as dedicated to crafting premium artisan foods and confections with a unique culinary perspective while maintaining sustainable and ethical operations which support the local community. The company pledges 10% of its net profits to local non-profit organizations.
