Take an introductory dive into the rich culinary history of the Philippines with chef and writer Yana Gilbuena. During this 75-minute interactive cooking class, Yana will introduce you to the pantry staples essential to her cuisine and we’ll make one of the Philippines’ most famous dishes: kare-kare. This peanut butter-based curry/stew usually stars oxtail, but in this class we'll explore a vegetarian version that still maintains the flavor profile of the dish.

About Yana: Yana Gilbuena, a Philippine-born, critically acclaimed, ancestrally taught chef, started SALO Series to share with the world the vibrant food culture of the Philippines and decolonize Filipino cuisine, one kamayan pop-up at a time. In her American tour, Yana hosted kamayan pop-up dinners in 50 states in 50 weeks, as well as across Canada, Mexico, Colombia, Australia, Europe and her home country, Philippines. She is a 2017 Stone Barns Exchange Fellow, a 2021 Real Food Real Stories Facilitator Fellow, a 2021 Mae Writing Fellow and has also been featured in major publications such as The New York Times, SF Chronicle, National Geographic and more. She's been published in "The Cherry Bombe Cookbook," "Feed the Resistance" and has self-published her own cookbook: "No Forks Given."
