The Balboa South – Mariana Cardenas Mariana Cardenas’s journey is a testament to perseverance and passion. She began her career as a janitor for the Navy in Chula Vista, eventually working her way into the kitchen and, after 16 years of dedication, becoming the region’s Executive Chef. During the pandemic, she transitioned to working at The Balboa South, one of her favorite burger spots. Just four months later, the owner, recognizing her commitment and love for the restaurant, offered her the business. Stunned but overjoyed, Mariana embraced the opportunity and has since upheld The Balboa South’s reputation for serving some of the best burgers in San Diego. La Nacional – Eddie Trejo and Joann Cornejo Husband-and-wife duo Eddie Trejo and Joann Cornejo are the visionaries behind Machete Beer House and have brought their passion for craft beer and Mexican flavors to Downtown Chula Vista with La Nacional. This modern Mexican cantina blends bold Oaxacan-inspired cuisine with expertly crafted cocktails, offering everything from ribeye tacos to mezcal Negronis.
