  • In Oceanside, California, Matsu hosted a rare evening of cultural exchange: a six-course tasting menu by chef William Eick paired with sake from Koedo Kagamiyama, the only brewery of its kind in Kawagoe, Saitama. Leading the pairings was Akihiro Igarashi, the brewery’s president, who oversaw its remarkable revival. A Brewery Reborn First founded in 1875, Koedo Kagamiyama once flourished as part of Kawagoe’s proud brewing tradition. After closing in 2000, it seemed lost—until its rebirth in 2007, defying Japan’s near-impossible licensing climate. Today, the brewery stands alone in Kawagoe, a town known as Koedo (“Little Edo”) for its preserved Edo-era charm. At the heart of its identity is Sake Musashi, a rice variety unique to Saitama. Cultivated with local farmers, it yields pure, expressive sake that has garnered national recognition, including a Gold Medal at the Japan Sake Awards. For this collaboration, Chef Eick crafted a six-course tasting menu that echoed the same philosophy of respect for terroir. Musashi Junmai with scallop and melon ponzu, a meeting of briny sweetness and refreshing acidity. Tobindori Shizuku Daiginjo with uni French toast and whisky nikiri, showcasing richness against delicacy. Musashi Daiginjo with sheepshead and banana curry, a pairing of layered umami and tropical notes. Wine Yeast Junmai with yellowtail, apple, and carrot, where fruit-driven aromatics mirrored the plate. Omachi Tokubetsu with lamb, honey, and grape, a dialogue of savory depth and gentle sweetness. STRAUSS: "Ein Heldenleben," Op. 40 The legendary Mexican composer Gabriela Ortiz writes music of terrific and visceral energy and notable melodic sweetness, and the San Diego Symphony Orchestra is thrilled to be taking part in these performances of her new cello concerto Dzonot, specially written for our very own Alisa Weilerstein. Ortiz is well-known not only for the deep connection to Latin American folk-music in her compositions, but also for her passionate concern for the vulnerable and fragile environment of our planet. In this concerto, she was inspired by the "cenotes", the vast and world-famous limestone sinkholes in Mexico, which are like underground worlds all their own, with their own rivers, lakes, and plant and animal life. The orchestra pairs this new work with one of the most famous, sumptuous and outrageous orchestral scores of all time, Richard Strauss’s "Ein Heldenleben" (A Hero’s Life) in which the composer mockingly and laughingly portrays himself as a lone hero fighting against the petty world of music critics and small-minded enemies, before turning in almost cinematic detail to his home love-life with his wife Pauline, and at the end setting out into the mountains for a spot of rest and recreation.   • Contra is American folk dance, a living tradition in which new dances are written all the time using a standard repertoire of moves. It is similar to square dancing, but is danced in two long lines (like English country dance), so that each pair dances with each other pair in one dance. No experience is needed, because there will be a lesson at 7 p.m., and every dance is taught and then "called" throughout by the caller. We practice gender-neutral calling and dance roles.
