The four-course dinner menu, developed by Rumorosa’s Executive Chef Marcos Seville, includes Spicy Pear Glazed salmon with ash rolled big eye tuna, octopus carpaccio, aguachile negro, paired with Blanca Mexico; Lavender Glazed Duck Breast, featuring duck prosciutto, honey poached gooseberries, parsnip puree, paired with Barbera; Chicharrón Wellington served with salsa verde and fondant potatoes, paired with Tinta Mexico; and for dessert, Tres Leches Tiramisu featuring spiced chocolate, carajillo, and fresh berries, paired with Rosado Mexico.
