Garibaldi’s New 'Sip & Savor' Series in October is inspired by Greece!
Created by Sous Chef Ashley, highlighting classic Greek comfort food elevated with local California produce.
Stifado is a Greek comfort food stew, traditionally featuring rabbit or beef. In our Garibaldi version, we are preparing a boneless beef shortrib, presented traditionally with pearl onions, shallots, tomatoes, garlic, dried apricots, red wine, and red wine vinegar, while highlighting local San Diego vegetables.
Stifado is a Greek variation of a classic beef stew with big, punchy flavors. What sets it apart from other stews are the warm spices that Greek people use in this dish - cinnamon, cloves, allspice, and bay leaves - making this a perfect fall dish. It's served with a crusty country loaf bread to soak up the delicious sauce.

- Short Rib Stifado: Red wine braised beef short rib prepared with pearl onions, local tomatoes, dried fruit, local San Diego vegetables, and warm spices (cinnamon, cloves, allspice, bay leaves), served with a crusty country loaf bread.
- Santorini Spritz: A crisp cocktail pairing St. Germaine, Domaine Nerantzi Assyrtiko, fresh lemon juice, honey simple, cucumber, basil, and soda water.
