In the depth of winter, we want food that is warming and hearty, while still being delicately flavorful, balanced, full of contrast and tempting to eat. Guest chef Susan Herrmann Loomis, author of “Plat du Jour,” is here to give you the French answer to your winter cooking dreams.
In this class you will learn to prepare rustic yet sophisticated braised chicken made with apples three ways: fresh apples, apple juice and apple brandy. The menu includes:
• Poulet Paysanne au Calvados et Garniture de Pommes (Peasant-Style Chicken with Calvados and Apple)
• Oeufs en Meurette (Poached Eggs with Squash Puree and Red Wine Sauce)
You’ll come away from this exciting class having learned two dishes that bring new life to your cold-weather cooking repertoire!
