  • What's on the Menu: A Perfect Pot of Beans Turkish White Bean Salad Roasted Broccolini and Chickpea Salad with Tahini-Lemon Dressing Canned or dried? Both! Beans of all kinds are a Milk Street pantry staple. They appear in cuisines across the globe, pair easily with diverse flavors and ingredients, and are easily transformed into robust meals. We’ll cover dried and canned in this Small Group Workshop, limited to 25 people and led by Rosie Gill, Director of Education, bean grower, cook and aficionado. The small class size and longer class time allows us to cover lots of ground with space for conversation, questions and cooking. We’ll discuss several of our favorite bean varieties, common and less-common, and you’ll learn our techniques for maximizing texture and flavor no matter what bean you start with. As we discuss, we’ll also cook. We’ll show you our template for making a versatile pot of beans from scratch, including a few “cheats” to improve convenience and simplicity, and discuss how you can boost flavor with added aromatics, spices and other ingredients. And we’ll answer the perennial question of bean lovers: to soak or not to soak? Once we’ve got our basic pot of beans going, we’ll make two recipes as we explore techniques to help all cooked beans become even more flavorful better.   • Clay Open Studio is an opportunity for students to practice the clay skills they have already learned in our clay classes. Students have the chance to work in our studio using either hand building techniques or working on a pottery wheel. This is not an instructional class. There will be no instructor. By signing up for Clay Open Studio, you will receive 1/2 a bag of clay, 1 bisque fire, 1 glaze fire, and use of our glazes. We work with midfire clay. No outside clay is allowed (because disastrous things can happen, and we like our kilns!) Since there is no instruction in Open Studio, some clay experience is necessary. Using STEAM, children get acquainted with various woodworking tools, techniques, and devices and learn about wood as a material. Students will be guided through a series of exercises that teach skills such as hand-eye coordination, problem solving, craftsmanship, and the mechanics of woodworking hand tools. Students will learn about wood as a material, proper, safe use of hand tools, and will make projects to take home. This class uses mostly hand tools. Founded and designed by Chula Vista resident Theresa Aqui, VaniTEE provides treatment modality for skin rejuvenation including Platelet-Rich Plasma (PRP) therapy for the face and body. VaniTEE also specializes in neurotoxins, HA fillers, and IV therapy. Aqui is the only nurse practitioner in the South Bay that offers nonsurgical thread lifts. “After suffering from acne scars for years, I was burdened by treatment costs and was determined to study aesthetic medicine,” said VaniTEE Founder & Owner Theresa Aqui, AGNP-C. “I was inspired to open a studio in my neighborhood to provide locals access to affordable skin rejuvenation treatments without sacrificing the quality and luxury of aesthetic medicine.” Aqui is a military spouse and has three children, Breanna, 18, Seth, 12 and Jayden, 6. Aqui’s ongoing inspiration for VaniTEE stems from 6-year-old son Jayden who has autism.
