Culinary Historians of San Diego will present “The Great Gelatin Revival” with Ken Albala, at 10:30 a.m. on March 18 in the Neil Morgan Auditorium of the San Diego Central Library, 330 Park Blvd, The entertaining lecture traces the history of aspics, jiggly desserts and jello shots. The author predicts that given the patterns of popularity since the Middle Ages, gelatin is about to come back into fashion. Not kitsch, nor the artificially flavored and colored monstrosities of the mid 20th century, but seriously delicious concoctions that will thrill, delight and occasionally terrify. Ken Albala is Tully Knowles Endowed Professor of History at the University of the Pacific in Stockton, CA. He has published 27 books including academic monographs, food histories, cookbooks, encyclopedias and translations. He also made several series for The Great Courses/Woodrium. The Great Gelatin Revival is his latest book. Next is Opulent Nosh. He is currently working on another about food, clay and wood.

Learn composting management techniques from basics to troubleshooting; sifting to vector control; and regulatory considerations to global impacts. This course will combine lectures, hands-on training, and a field trip to operational composting facilities. Composting on your farm, ranch, or large property is an ideal way to manage crop residues, manures, and other organic waste while creating a stellar soil amendment. During this three-week course, we will address the unique strategies, challenges, and opportunities that arise through medium-scale composting. This course does not address typical residential composting or large-scale commercial composting. Skate Rising, a program that offers service opportunities and free skate instruction for girls ages 4-18, is hosting a food drive and learn-to-skate clinic 9-11 a.m. on January 14 at the Encinitas Community Park. The six-year-old program invites participants to bring granola bars, dried fruit or nuts, and crackers to donate to low-income families served by the Community Resource Center. Professional instruction will be offered by local pro and Olympic skaters and free rental gear will be available for all.
