Culinary Historians of San Diego will present “Columbian Exchange: the Positives,” with Barbara Baxter, at 10:30 a.m. January 20 in the Neil Morgan Auditorium of the San Diego Central Library.
How did Christopher Columbus’ voyage to the New World in 1492 change the American cuisine? Barbara will describe and illustrate how important the transfer of animals, grains, spices and more greatly influenced the cuisines of the New and Old Worlds.
Barbara Baxter is a popular Culinary Historians of San Diego presenter. Her main interest is in wine, whose history is naturally interlinked with food. After studying wine at Paris’ University of Sorbonne, she continued her study of its history. Barbara has been featured in the Wall Street Journal, and has lectured at many museums and UC universities in California.
