The name Witherby pays homage to the building’s storied past: the original 1886 structure once housed tenant Henry Witherby, the first to lease space in the historic landmark. Today, the name symbolizes a new legacy rooted in tradition and reborn through food. Chef Robin’s menu is personal, drawing on his culinary mentors, family heritage, and global travels. Subtle Mediterranean influences blend seamlessly with the seasonal freshness of California produce, creating thoughtful dishes with layered flavors and unexpected heart. Located in the heart of the Gaslamp Quarter, Witherby carries forward the timeless elegance and laid-back luxury of The Beau Hotel.
