A warm interlude follows as Piper’s kitchen presents an indulgent steamed bun with caviar and bone marrow butter, bridging comfort and luxury. The progression continues with a geoduck crudo, accented by rhubarb, green strawberry umeboshi, and a refreshing tomato–olive oil granita—an exploration of oceanic delicacy and vibrant acidity. For the second course, guests enjoy charcoal grilled sable, elegantly paired with caviar, roasted leeks, and a shio koji beurre blanc that harmonizes beautifully with Uka’s nuanced sake profiles. The evening culminates in a rich, expressive finale: A5 wagyu beef accompanied by king trumpet mushroom custard and a deep black garlic bordelaise—an umami driven dish designed to complement the depth and structure of Uka’s premium selections.
