  • Featuring Casamigos Tequila Clooney welcome margaritas will be served upon arrival, setting the tone for an exquisite dining experience. Dinner opens with an aguachile, Mexican white shrimp marinated in zesty chiles serranos, cilantro, fresh lime juice, onions and cucumbers, followed by a tropical salad served with mangos, grapes, oranges and avocados tossed in a mango chipotle dressing; and your entrée choice of either spicy chile campanas; two stuffed red bell peppers, one with sauteed shrimp, serrano chiles and salsa verde, and the other with grilled chicken, chiles and diablo salsa, tequila lime salmon, pan seared and baked pacific salmon drizzled with the famous tequila lime sauce and served with chipotle mashed potatoes; or classic carne asada a la tampiqueña, grilled tender carne asada topped with grilled onions and roasted mild green chiles, accompanied by a spinach and vegetable enchilada covered in salsa verde.
