This special edition of Vistal’s quarterly dinner series dives deep into the seafood industry, highlighting the Yellowtail during its peak season in San Diego (June-October). Before indulging in the main courses, guests will hear from John Hyde, Ph.D., NOAA Program Lead, and Jared Saaib, Owner of Strictly Irons, as they educate and share the significance of the Yellowtail. The experience includes a live breakdown demonstration with Chula Seafood, while guests will enjoy tray-passed appetizers. Following the demonstration, Chef de Cuisine Fabian Aceves will present a curated four-course dinner featuring, Wild California vs. Farmed Baja Yellowtail Crudo, Seared Yellowtail Nicoise Salad, Coconut Butter Poached Yellowtail, and Dulce De Leche Cheesecake. The heart of Downtown Chula Vista, including Third Avenue and Memorial Park, will be transformed into a vibrant tribute filled with cempasuchils, music, large-scale alebrijes, a community altar, and a few friendly competitions.
