On this episode, we take a personal tour with chef Miguel Angel Guerrero, the founder of the Baja Med Cuisine movement. Today we find ourselves in the Valle de Guadalupe at La Esperanza restaurant. It is the fourth restaurant of chef Miguel Angel Guerrero who invented the “Baja Med Cuisine'' or Baja Mediterranean. Our first step is to go hunt for the quail we are going to prepare. Next we prepare the sea bass the chef caught the day before.

Jorge is excited as he hangs out in the kitchen and learns all the special techniques of this seasoned chef. No secrets are withheld from the camera, not even grandma’s secret chocolate sauce recipe. Finally comes the tasting, the moment all the hard work pays off.
