On this episode, Jorge visits a Polo club in the Valley of Guadalupe, Ensenada. He learns about the origins of the sport, from its early days as a training game for a king's calvary unit to its modern day reputation as an exclusive activity for the affluent. He also meets a first-generation culinary school student now making a name for himself in the Tijuana restaurant industry with his Cali-Baja fusion style cuisine. He samples a fish taco negro with squid ink, spicy octopus bowl, and Tijuana inspired mac & cheese" at Oryx Capital.
